Cooking for Tackle It Tuesday

Tackle It Tuesday Meme

For this weeks Tackle It Tuesday, I have decided I will cook something yummy for dinner. Hubby already has plans to grill out some pork steak and so I am going to make scalloped corn to go along with it. We will have a yummy salad with tomatoes our neighbor brought over from her garden.

Here is my recipe for Scalloped Corn

2 eggs beaten
1 can whole kernel corn using liquid (I like to use white corn)
1 can cream style corn
1 package jiffy style corn muffin mix
1/2 cup melted margarine
1 cup sour cream

Mix all and bake in a 9×13 baking dish. 350 degrees for 45 minutes covered. Remove foil and bake an additional 15 minutes.

I am ok when it comes to making the bags but I procrastinate at finishing them. My tackle for this Tuesday is to get the button sewn onto this bag. I put the batting and backing with the quilt top and started to machine quilt my log cabin quilt. I don’t like the way it looks and so I am going to tear out what I have stitched so far and hand quilt this quilt.

Tackle It Tuesday Meme

We had gorgeous weather this weekend. Unfortunately, I saw all the things I left undone in the fall. I did not cut down any of my perennials. I don’t remember why I didn’t do my usual whacking and cleaning in my flower beds. Now they are calling my name. New growth is trying to rise up through the mess. Today’s tackle will be to cut down all the dried growth from last year and get my flower beds ready for a beautiful spring.
