Four Foods on Friday #113

This week’s question for Four Foods on Friday asks, what can you make with eggs, meat or poultry, vegetables and a starch?
When my dad served in the military, he was sent to Vietnam to fight in that conflict. While there he ate a rice dish he called Kow Pod. He tried to duplicate the recipe and we still make it in our house. My sister in-law is from Thailand and her Kow Pod is very similar to the way we make it. My dad duplicated a winner!
We fry any type of meat in a bit of oil then add vegetables like onion and tomatoes. We dump in some cooked white rice and crack an egg or two into the mixture. Stir until the eggs are cooked. Serve.

Ooo this looks good! I did something similar, but called it Stir Fry!
I wish we Americans ate more vegetables. I am looking into a raw food diet.

This does sound like yummy fried rice. A good variation would be to add noodles instead of rice. Or perhaps make the stir-fry part and then serve on top of a bed of spaghetti squash!

Now see I already did that just because I like mixing that stuff up to eat and what do you know, it was an actual dish lol
