Four Foods on Friday #51
Val is busy this week but she put out some great questions for her Four Foods on Friday meme. Thanks Val!
#1. I passed Costco and saw gas at $2.84 and have had Costco on the brain since. Share a cupcake, muffin or cookie recipe.
You can see my recipes at the end of this post. Two great bran muffin recipes that use cereal for the ingredient.
#2. Cupcakes, muffins and cookies require something to drink. What do you drink with them?
Coffee
#3. Which do you prefer, mini muffins and cupcakes or full sized ones?
I love huge ones.
#4. What type of muffin or cupcake pan do you use? Silicone, disposable, etc.
I bake in a metal muffin pan and use paper liners.
I used to make muffins that called for Raisin Bran cereal but I’ll be derned if I can find it. So, I went searching to find something close. I found this bran recipe at Kellog’s website.
All-Bran® Honey Muffins
INGREDIENTS
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup All-Bran® Original
1/3 cup buttermilk or sour milk
1 egg
1/2 cup honey
1/4 cup shortening
DIRECTIONS
1. Stir together flour, baking powder, soda and salt. Set aside.
2. In medium mixing bowl, combine Kellogg’s® All-Bran® cereal and buttermilk.
Let stand about 2 minutes or until cereal softens. Add egg, honey and shortening.
Beat well. Add flour mixture, stirring only until combined. Portion evenly into nine
2 1/2-inch muffin-pan cups coated with cooking spray.
3. Bake at 400°F about 25 minutes or until golden brown. Serve warm.
NOTE
Variation:
To make sour milk, stir 1 tablespoon vinegar or lemon juice into 1 cup milk.
To substitute milk for buttermilk or sour milk, omit buttermilk or sour milk and use 2/3 cup milk, 1/4 cup honey, 2 1/2 teaspoons baking powder and omit baking soda.
I thought that this one had simpler ingredients, ones I would have on hand.
APPLE BRAN MUFFINS
INGREDIENTS
2 cups all-purpose flour
2 teaspoons low-calorie granulated sugar substitute
1 tablespoon baking powder
1/2 teaspoon salt
2 cups All-Bran® Original
or 2 cups All-Bran® Bran Buds®
2 cups apple juice
1 egg
1/4 cup vegetable oil
DIRECTIONS
1. Stir together flour, sugar substitute, baking powder and salt. Set aside.
2. In large mixing bowl, combine Kellogg’s® All-Bran® cereal and apple juice.
Let stand about 2 minutes or until cereal softens. Add egg and oil. Beat well. Add
flour mixture, stirring only until combined. Portion evenly into twelve 2 1/2-inch
muffin-pan cups coated with cooking spray.
4. Bake at 400°F about 26 minutes or until golden brown. Serve warm.
Note
Variation: 2 cups milk may be substituted for apple juice.

Now I wonder if I could use something else besides the apple juice in the bran muffins because those are healthy enough that I might give a whirl especially since I eat the cereal lol

Regarding Costco gas, does it last longer for you? I think it does for us.

Those muffins sound not only healthy but good, too. I’m collecting healthy muffin recipes to have for this fall and winter, so I’ll print yours out.

Love the recipes. Will have to try these out once I’m finally off my low carb diet. I prefer drinking juice with my muffins.
