Cooking for Tackle It Tuesday

For this weeks Tackle It Tuesday, I have decided I will cook something yummy for dinner. Hubby already has plans to grill out some pork steak and so I am going to make scalloped corn to go along with it. We will have a yummy salad with tomatoes our neighbor brought over from her garden.
Here is my recipe for Scalloped Corn
2 eggs beaten
1 can whole kernel corn using liquid (I like to use white corn)
1 can cream style corn
1 package jiffy style corn muffin mix
1/2 cup melted margarine
1 cup sour cream
Mix all and bake in a 9×13 baking dish. 350 degrees for 45 minutes covered. Remove foil and bake an additional 15 minutes.

We planned on grilling out tomorrow and this would be perfect as a side dish. Thanks for sharing the recipe! Sounds like you have a fabulous dinner planned.

Yummy! I’m always looking for great new recipes! Btw, my fruit salad recipe consist of halfing a seedless watermelon, using a surraded knife (I got mine from Pampered Chef) to zig-zag around the edge of one half. Use a mellon ball scooper to get the watermelon out of it. Then I fill the shell with watermelon, cantaloupe, seedless grapes (I like the red ones), blueberries, and strawberries. Basically, you can fill it with whatever fruit is seasonal. If you want smaller portions, you can also use the cantaloupe as a “bowl” and add fruit to it. If you really want to get fancy, you can make a fruit dip to go with it. I love taking this dish to cook-outs and people always think it took way more effort to make than it actually did

I love this recipe! Of course, it is definitely important to not forget to put the corn in! (I forgot once! LOL)

sounds good. for some weird reason we cannot get corm meal mix here. When I head down to the states soon I will be stocking up.
